The text already is the size of the bounding box. I'm concerned that you might not need to clip the text at all. If you could give us a little more info about what you want to accomplish, we can guide you in the proper way to do it. Possibly you didn't have both the text/group and clipping path both selected. I don't know why the result would look like your 3rd example, because it looks like you've drawn a whole new clipping path.
